# Clara's — Considered Baking > Clara's is a small, considered home bakery run by Alexandra. Slow-baked, certified-organic cupcakes sweetened only with whole fruit, raw honey, and house-aged vanilla — no refined sugar, ever. Baked by hand in small batches with a firm 48-hour lead time. Things to know: - Every order is made to order: minimum 6 cupcakes, 48-hour lead time (no rush orders), and Alexandra confirms each order personally within 24 hours. - Nothing is sweetened with refined sugar. Sweetness comes from mashed banana, Medjool dates, raw local honey, and grade-A maple. - The site is a single-page home (sections linked by anchor below) plus a Journal of long-form essays. - Contact: hello@clarascupcakes.com · Tue–Fri 8.00–17.00 · Sat–Sun 9.00–15.00 · Closed Mondays. ## The bakery - [Home](https://clarascupcakes.com/): Overview of Clara's, the collection of six cupcakes, and how to order. - [Our Story](https://clarascupcakes.com/#about): Alexandra's story — why Clara's began and the belief that indulgence and pleasure are not the same thing. - [Ingredients](https://clarascupcakes.com/#ingredients): The pantry philosophy — naturally sweetened, certified organic, whole real foods, slow crafted, and vanilla aged two years. - [Signature Recipe](https://clarascupcakes.com/#recipe): The full Carrot & Spelt cupcake recipe — banana & maple sweetened, whipped honey-yogurt frosting. - [The Collection](https://clarascupcakes.com/#gallery): The six cupcakes — Carrot & Spelt, Olive Oil Lemon, Banana Walnut, Dark Cacao, Matcha Pistachio, and Date & Tahini. - [Order](https://clarascupcakes.com/#order): How to order — minimums, lead time, custom designs, delivery, and pricing. ## Journal - [Journal index](https://clarascupcakes.com/blog): Essays on ingredients, philosophy, and the practice of slow baking. - [Why I age my own vanilla — and why it tastes so different](https://clarascupcakes.com/blog/vanilla-extract): On two-year house vanilla, vanillin vs. real beans, and the patience time requires. - [Banana, date, and the case against refined sugar](https://clarascupcakes.com/blog/banana-sweetening): What whole fruit actually brings to a cupcake after three years of testing. - [The slow bakery: why every order takes 48 hours](https://clarascupcakes.com/blog/slow-bakery): Why a rested batter and a settled frosting matter more than convenience. ## Optional - [Newsletter & contact](https://clarascupcakes.com/#order): Reach Alexandra or sign up for occasional notes from the kitchen.
